Camp Sandwich


This is a quick and easy campfire spin on a beef taco. I used pita bread as a fun substitute for corn tortillas. You can also make it as a snack, or as a starter of a main meal. The flavorful spices and simple preparation will be sure to make it a camping favorite for you and all your mates. Served with hummus or your favorite dip, it’s hard to beat.



Ingredients

1 lb 2 oz ground beef

2 garlic cloves, minced

1 white onion, finely diced

½ cup parsley leaves, chopped

2 teaspoons sweet paprika

1 teaspoon dried

Italian herbs

12 soft tortillas

Olive oil, for brushing

Kosher salt

Hummus or your favorite dip, to serve

Equipment:

Fire pit, grill grate

HOW TO MAKE IT

  1. Light a fire and let it burn down for about 1 hour or until you obtain a medium heat. Place a grill grate about 12 inches above the coals.

  2. Combine the beef, garlic, onion, parsley, paprika and Italian herbs in a mixing bowl and stir well to combine.

  3. Place a heaped tablespoon of the beef mixture in the middle of a tortilla, then fold it in half. Brush both sides of the tortilla with olive oil and season with salt, then repeat with the remaining tortillas and beef mixture.

  4. Add the tortillas to the grill grate and cook for 5 minutes each side or until the tortillas are golden and the beef is cooked through.

  5. Cut in half and serve with hummus or dip.
